Nga Tikanga Maori - Maori food safety

NZFSA is working with Māori on food safety issues based on the principles of partnership, participation and protection. The foundations for this partnership are set out in the strategy ‘A Shared Vision: Mātaki Whānui’.

Strategy for involving Māori in food safety

NZFSA works in partnership with Māori on food safety and food suitability issues. Our publication ‘A Shared Vision: Mātaki Whānui’ explains how we work with Māori to promote consumer health and safety to, for example, reduce foodborne illness amongst Māori.

Food safety for Māori – on the Marae and at home

Hangi is the traditional Māori way to cook food. Safe food handling and food hygiene practices are important with all food, including hangi.

A guide is available for anyone involved in preparing a hangi. It includes keeping it safe from pathogens (bugs) that can cause illness. It covers all aspects of a hangi and describes how to manage each step to achieve a safe outcome. This is not about how to cook a hangi, but more about how to cook it safely.

E nga iwi, e nga reo, e nga mana, tena koutou, teno koutou, tena tatou katoa.

In 2007, NZFSA undertook a survey to gather information to produce a food safety resource for marae. This paper provides a summary of the findings, and resulting recommendations.
