Subject: Guidelines for the Management of Listeria in Fish Packing Houses

FIICC agreed that it would be desirable for guidelines to be developed to assist fish packing houses with the management of Listeria. These guidelines describe the potential problem areas in fish processing operations and how they may be managed to minimise the potential for Listeria contamination.

The guidelines are intended as recommendations for fish packing houses. It should be noted that the requirements of the legislation and the FIICC Industry Agreed Standards and Circulars must be met by fish packing houses.

The guidelines have been issued in loose-leaf format so that they can be updated as required. It is suggested that fish packing houses.
