Consultation - Spray Chilling: Large Mammals and Large Birds

New Zealand has allowed spray chilling of carcasses for some time in accordance with the requirements of IS6. A number of premises have used this spray chilling standard for beef and venison operations. The uptake for ovines has been limited due to the more complex handling operations for chilled carcases. As a result industry requested NZFSA review the requirements for spray chilling of carcasses.
