Application A1003 – Asparaginase from Aspergillus niger as a Processing Aid – Assessment Report

Thank you for the opportunity to comment on this application. The New Zealand Food Safety Authority (NZFSA) has the following comments to make.

NZFSA supports Option 2 to amend Standard 1.3.3 – Processing Aids, to approve the use of asparaginase sourced from A. niger as a processing aid (enzyme). We are satisfied that the proposed use of asparaginase is technologically justified and that no public health or safety concerns were identified.

We note that where wheat flour or maltodextrin sourced from wheat is used in the manufacturing process of asparaginase from A. niger it should be declared on the label of any food that has been treated with the asparaginase enzyme preparation as per the requirements of Table to Clause 4, Standard 1.2.3 of the Food Standards Code.

NZFSA notes that the enzyme has been allocated an ADI of “not specified” by the 69th meeting of JECFA and suggests that this is taken into account in the Approval Report for A1003.
