Custom-made Food Control Plans

A custom-made Food Control Plan is a written plan which is unique for a particular business. It describes how that business eliminates or minimises hazards with the goal of producing safe and suitable food. Under the proposed food regulatory system operators of complex businesses will develop their own custom-made Food Control Plan either from scratch, or by adapting one or more off-the-peg Food Control Plans.

In preparation for the new system, NZFSA is developing support tools to help operators write their custom-made Food Control Plan.

Hazard database

This searchable Hazard database provides information on food safety hazards that can occur in New Zealand foods.

The Hazard database has been designed to help operators write their custom-made Food Control Plan and underpin the advice in off-the-peg Food Control Plans. It will also be useful for operators developing risk-based programmes such as Food Safety Programmes and Risk Management Programmes, and other people such as regulators, auditors, students and consumers.

Search results list the hazards/s associated with the food, the source of the hazard, the regulatory limit (if applicable) as well as the action a food operator can take to control the hazard.

Food Control Plan manual

Good operating practice (GOP) is a system of procedures that set out how to operate the food business to produce consistently safe and suitable food.

NZFSA has developed guidance for developing GOP procedures to help food business operators write GOP procedures for a custom-made Food Control Plan. It will also be useful for operators developing risk-based programmes such as Food Safety Programmes and Risk Management Programmes.

Operators may wish to consider these good operating practice procedures when developing their own. The guidance also underpins the advice given in Off-the-peg Food Control Plans, checklists and record forms.
